What causes it
A loot table or loot modifier uses the minecraft:alternative condition, which Minecraft 1.20 renamed to minecraft:any_of. The file was written for 1.19 or older, so the game skips it and those drops never happen. The server keeps running.
How to fix it
Check that every mod and datapack is built for this Minecraft version. A datapack that overrides loot needs its minecraft:alternative conditions renamed to minecraft:any_of. A mod shipping these needs updating, or reporting to its author if you are already on the newest build.
